Simple Blueberry Scones

First time making scones and I think I aced them! Checkout the super simple recipe! Even had all the ingredients on hand!

Ingredients

  • 4 cups all-purpose flour
  • 6 tablespoons sugar
  • 4-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup plus 2 tablespoons cold butter
  • 2 large eggs
  • 3/4 cup plus an extra 2 tablespoons milk to brush tops
  • 1-1/2 cups fresh or frozen blueberries

Directions

  • Combine flour, sugar, baking powder and salt in a bowl.
  • Cut in butter until you achieve crumbs.
  • In separate bowl, whisk eggs and 3/4 cup milk.
  • Then add wet ingredients to dry ingredients.
  • Gently knead dough on lightly floured surface and add blueberries.
  • Divide dough in half. Pat each portion into an 8 inch circle. Then cut each into eight wedges.
  • Place on greased baking sheets.
  • Brush tops with milk.
  • Bake at 375° for 15-20 minutes or until golden brown.

Sit back and enjoy! These are best served warm.

Note:

If using frozen blueberries do not thaw as this will cause even more discolouration of the batter.
