Berry Protein Muffins

I love recipes that don’t have sugar as an added ingredient. These are even better since they have added protein! Made them last night and they were delicious!!! Thought I’d share with you all!

Ingredients

  • 1 cup oat flour
  • ¼ cup coconut flour (can substitute with flour of your choice)
  • ½ cup unsweetened greek yogurt
  • 3 egg whites
  • 1 cup unsweetened applesauce
  • 2 tbsps. maple syrup (can substitute with honey)
  • 1 tsp. pure vanilla extract
  • 1 peeled mashed ripe banana
  • 1 tsp. cinnamon
  • 1 ½ tsps. baking powder
  •  ½ tsp. baking soda
  • 1 tsp. fresh lemon zest (can substitute with orange zest)
  • 1 cup frozen or fresh blueberries or berries of choice
  • 3 scoops Vanilla Protein powder
  • Oats to sprinkle on top of muffins

Instructions

  1. Preheat oven to 350 degrees. Spray muffin tin with non stick cooking spray.
  2. In a large mixing bowl, combine all ingredients until well blended. Add blueberries. Gently mix everything together.
  3. Fill each muffin about two thirds of the way, sprinkle with oats and place in oven.
  4. Bake for 18 to 22 minutes or until a skewer comes out clean.
  5. Eat and enjoy!

Makes 12 muffins 😀
