Busy Girl Lasagna Recipe

Being half Italian, I’ve eaten my fair share of lasagna. Who doesn’t like lasagna? All that cheesy goodness? My husband and I are big fans so I thought I’d try making my first lasagna this past Sunday. Of course none compares to Nonna’s lasagna with the homemade dough, but this was pretty good. Way better than the store bough ones.

I made my own recipe based on lasagnas that I’ve tasted, some recipes researched online and the one on the back of the noodle box. Here is the super easy recipe along with pictures for you to see!

Ingredients:

  • Your choice of meat Sauce (minimum 1 pound of ground beef and a 3 cups of sauce)
  • 4 cups of of ricotta
  • 1/2 a small pack of frozen chopped spinach (thawed)
  • 3 cups of shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 16 lasagna noodles (1 pack, I used Catelli Smart Lasagna with fiber)

Directions:

  1. Make your sauce! I’m a meat eater so mine was made with lean ground beef! 14331667_10157401650925065_532482265_n
  2. Make your ricotta mixture: In a large bowl, mix together the ricotta, 2 cups of the mozzarella cheese, half of the grated Parmesan cheese and chopped spinach.
  3. Cook noodles! depending if you bought the precooked ones or the uncooked ones like me.
  4. Assemble! In the bottom of a 9×13 inch baking dish evenly spread 3/4 cup of the sauce mixture. Cover with 4 uncooked lasagne noodles, making sure to overlap them. Then you can start the full layers by adding a third of the cheese mixture, and 1/4 cup sauce. Repeat layers 3 times. Top with 4 noodles, remaining sauce, remaining mozzarella and Parmesan cheese. Cover with aluminum foil.
  5. Bake in a preheated 350 degree F(175 degrees C) oven for 30 minutes with the Catelli Smart noodles. The cooking time might be from 30 to 45 minutes depending on your package instructions. Let stand 10 minutes before serving.14341416_10157401650340065_750988399_n

6. Last step is to EAT!

Total time: 2 hours including all prep, sauce making and lasagna baking.

Thoughts after making: I was surprised how easy it was! A very simple recipe that can be tweaked to your taste. I’d give it an 8 on 10.
